Cabernet Sauvignon

Dominique Portet Cabernet Sauvignon comes from two distinct Yarra Valley sites, the cooler at Coldstream, the other warmer at Steels Creek. Both have sandstone soils over clay.

The blend is predominantly Cabernet Sauvignon with small amounts of Petit Verdot, Malbec and a dash of Cabernet Franc.

The fruit is handpicked, mechanically sorted, destemmed and gently crushed. The juice spends three weeks on skins to develop complexity. Following fermentation, the wine ages in French oak for 14 months.

Deep crimson purple, Dominique Portet Cabernet Sauvignon is elegant with bright, pure fruit flavours, refreshing acidity and silky tannins. Cellaring potential is 12 years.
